Chocolate and Caramel Brownies

Last week B commented that I hadn't baked anything in a while (my response was "but we're being healthy and going to the gym!"), so when I was doing a Tesco shop the other night I thought I'd buy some baking stuff.  I did a bit of Googling and found this amazing looking recipe for chocolate and caramel swirl brownies that sounded super easy so into the basket went the ingredients and as soon as it arrived on Thursday night I got to work!

Chocolate and Caramel Swirl Brownies


150g butter
200g dark chocolate
2 eggs
175g soft light brown sugar
55g plain flour
1tsp baking powder
4-6tbsp from a tin of Carnation Caramel


1) Preheat the oven to 180 degrees.  Grease and line a square baking tin, and set aside.

2) Melt the butter and 55g of the chocolate in a bowl over boiling water.

3) Beat the eggs with the sugar in a large bowl, then sift in the flour and baking powder.  Stir in the melted chocolate mixture and beat together until well blended.

4) Chop the remaining chocolate (or if you're lazy like me, use chocolate chips instead of a bar of chocolate and you don't have to do any chopping!) and stir in.  Spoon the mixture into the tin and spread evenly.

5) Beat the caramel in a small bowl and swirl into the mix in the tin.  Place in the oven and beat for 30 minutes or until it starts to shrink slightly from the sides and when you poke a knife in the middle it comes out with crumbs on it.

6) When out of the oven leave to cool and then cut into squares.
