Recipe: Duck Pappardelle Crisp

Haven't done a dinner recipe in a while - made this Duck Pappardelle Crisp a few months ago, it was the first time I'd ever cooked duck and it went down really well (even with the ever fussy B!).

Duck pappardelle crisp recipe ingredients


250g pappardelle
2 tbsp olive oil
2 duck breasts
2 tsps chopped ginger (or 1/2 teaspoon ginger powder)
1 bunch spring onions
1 fresh red chilli
3 tbsps hoisin sauce
splash dark soy sauce
1 lime
300ml coconut milk


1) Brown the duck breasts in a frying pan before putting in the oven for 20 mins to cook through (I used roasting bags from Lakeland)


2) Once the duck is almost finished, put the pasta on to boil with the oil and some salt.  Cook for 8-12 minutes.

3) Once the duck is cooked slice the breasts and then fry for 1 minute before adding the ginger and spring onions and frying for another 2 minutes.

4) Add the liquids and the chilli and cook for 1 minute

5) Drain the pasta, put in a bowl and fold in half of the meat/sauce mixture.  Spoon into a dish and top with the remaining meat mixture.  Cook at 180 for 10 minutes until the pasta starts to crisp.

6) Sprinkle with parsley and serve!
