Recipe: Mint Choc Chip Muffins

I haven't done a recipe post in a while, so here's how to make these yummy mint choc chip cakes that I made for my cup final party a few weeks ago (these were Hibs cakes....I also made jam tart cakes for Hearts!).  The muffin recipe I used for the cakes themselves came from the BBC Good Food website.

Mint Chocolate Chip Muffin Recipe


(makes 12)
125g plain flour
25g cocoa powder
1tsp baking powder
1 egg
60g sugar
2tbsp oil (I used sunflower oil)
100ml milk
1 bag chocolate chips


1) Sieve the flour, baking powder and cocoa into a bowl.

2) Mix the egg, milk, oil and sugar together in a jug.

3) Stir the two mixtures together and add half the bag of chocolate chips.  Mix until combined but still lumpy.

4) Spoon into cake cases (fill about half-way) and then place in the oven at 160 degrees for about 20 mins, until the cakes are cracked at the top.

5) In a bowl make butter icing including a 1/4 teaspoon of peppermint extract and a 1/4 teaspoon of green food colouring.  I can't remember what measurements of butter and icing sugar I used, but at one point I ran out of butter but it looked like I still didn't have enough icing for all the cakes so I added more icing sugar and used milk to bind - it worked well!

7) Once the cakes have cooled pipe on the icing and then sprinkle with the remaining chocolate chips.
