Recipe: Homemade Meatballs

Here's a nice quick and easy homemade meatball recipe that I made up last night - they were rather tasty if I do say so myself!

Ingredients (serves 2)

250g steak mince
1 onion
1 egg
Tin chopped tomatoes
1 tbsp tomato puree
1 tbsp green pesto
Mixed herbs
Cajun spices
Pasta shapes
Parmesan (to serve)

Firstly, finely chop the onion (very very finely if, like me, you are cooking for a fussy boyfriend who won't eat onions!).

Next, melt some butter in a pan (I'd normally use olive oil here, but I didn't have any so substituted for butter and it actually tasted better) and then fry the onions until they are lovely and soft and golden.

Now transfer half of the onions to a medium sized bowl and leave to cool (I tried speeding up the cooling process by holding the bowl out of the window but I don't think it made much difference....). Leave the other half in the pot and set aside for the sauce

Now for the disgusting part.  Add the mince, whisked egg, herbs and spices, and some salt and pepper to the bowl with the cooled onions and mix with your hands.  I'm one of those weirdos whose stomach turns at the thought of touching raw meat, so I wore some fetching plastic gloves during this!

Now roll the meat mixture into balls (you can make them any size you want - I went with ferrero rocher sized balls and it made 10).

Next, heat a little oil in a pan and then fry the meatballs in batches until they are brown all over.  Then transfer to an ovenproof dish.

Whilst the meatballs are browning you can get started on the sauce.  Go back to the pan with the other half of the onions and add the chopped tomatoes, tomatoe puree, pesto, some herbs, and salt and pepper.  Simmer gently for 10 minutes.

Once the sauce is ready pour over the meatballs in the dish, give it a little stir so the sauce is all the way through, and then place in the oven (180 degrees) for around 20 minutes.

Whilst the meatballs are in the oven you can make your pasta.  I reused the pan that I fried the meatballs in as it gives the cooking water an extra meaty kick (emm also it's less washing up!).

Finally, drain the pasta and add the meatballs and sauce to the pan, stirring together until the pasta is covered. Transfer to a plate and sprinkle with grated parmesan, and voila you're good to go!

  1. You can add another twist to these two elements by adding a cheese sauce. Put the meatballs and tomato sauce in a rectangular ovenproof dish, and then stir though the cheese sauce ... a bit like raspberry ripple if you know what I mean, and then bake it in the oven for 20 minutes or so. Jazz up with a crisp green salad, or some freshly steamed broccoli or asparagus, and Bob's your uncle!
